Rabbit Sauté with Tuscan Bouquet / Tuscan Bouquet

Ingredients: 1 rabbit in pieces
5 cloves of garlic in their jackets
2 onions
1 bay leave
Juice of ½ lemon
3 tbsp Tuscan Bouquet
2 c. white wine
2 tbsp cream
2 tbsp flour
¼ c. oil
Salt and pepper
Preparation:
In a cast saucepan, heat some oil et then brown the pieces of rabbit. Remove the rabbit from the saucepan. In the saucepan, heat the rest of oil and add onions, bay leave and the cloves of garlic. Cook for 5 minutes. Add the pieces of rabbit and cook for 2 minutes more. Dredge with flour, stir and pour in the wine. Cover and cook for 45 minutes at slow heat. Once the rabbit is cooked, add the lemon juice, the cream and boil. Serve.
