Seasoned Trout Salad /Fish Rub

Ingredients:

2 smoked trout fillets, coarsely carved
1 tbsp Fish rub
½ c. walnuts
2 tbsp raspberry vinegar
½ tbsp mustard
5 tbsp olive oil
1 c. celery stick, cubed
1 c. parsley
¼ c. dried raisins

Preparation:

Toast walnuts. In a large bowl, mix in oil, vinegar and mustard. Add the other ingredients and stir delicately. Serve on a bed of lettuce.
