Morrocan Couscous / Couscous Spice
Ingredients:
1 tbsp oil
3 chicken legs
6 merguez sausages
3 carrots cut diagonally
2 onions, diced
2 zucchini
1 sweet potatoe
½ parsnip coarsely chopped
2 cloves of garlic finely chopped
3 tbsp Couscous Spice
1 can 28 oz of tomatoes in dices
1 c. chickpeas
½ dried raisins
Preparation:
Brown the chicken legs in oil. Once they are brown, add in the vegetables, the tomatoes, the garlic, the seasoning, the chickpeas and the raisins. Cook a slow heat for 35 minutes. At the end, add in the merguez sausages beforehand browned. Serve on a bed of couscous. If desired, sprinkle over some seasoning.
