Cornish Hens with Herbs / Herbes de Provence

Ingredients:
4 cornish hens
¼ c. Herbes de Provence
¼ c. olive oil
2 tbsp lemon juice
Salt and pepper
Preparation:
Set the oven at 350º F. In a large bowl, mix in oil, lemon juice and herbs. Open up the cornish hens the wallet way and coat them with the mixture. Salt and pepper. Cook in oven for 1 hour. Once cooked, let stand the hens for 10 minutes. Enjoy with a green salad.
