Curry Shrimp // Madras Curry

Ingredients:
500 fresh shrimps
1 big onion
1 piece of ginger (about 5 cm)
½ tsp salt
½ tsp sugar
¼ c. oil
1½ tsp Madras Curry
1 fresh chile pepper (serrano type or other) lenghtwise cut
1 c. water
1 can coconut milk
1 tbsp lime juice
Salt and pepper
Quarters of lime (for decoration)
Preparation:
Chop finely onion and ginger. Heat oil. Tumble in oil the onion and ginger mixture, add salt and sugar, and brown, stirring frequently. Add in the Madras Curry, the chile pepper and cook for 2 minutes, stirring occasionally. Pour in the water, the coconut milk and the lime juice. Simmer for 5 to 10 minutes or until thicker consistency.
In the meantime, peel the shrimps, salt and pepper, and add to the sauce. Cook for 3 minutes. Serve on a bed of rice. Garnish with the lime quarters.
