Rack of Boileau Doe with Cepes Tartinade / Game spice
Ingredients:
1 rack of Boileau Doe (or a meat of your choice)
500 ml grape seed oil
5 g sea salt
5 g black pepper
2 units long pepper
5 g Game Spice
Preparation:
Crush spices with a pestle or in a grinder. Season the rack with half of the spices and brown it in hot oil on all sides. Season with the rest of the spices and cook in the oven at 450 º F for 10 minutes. Rare cooking. Take out of the oven and let stand for 10 minutes. Slice in between the ribs. Just as serving, spread with the cepes blend.
