Spicy Lamb Leg /Lamb Seasoning
Ingredients:
1 lamb leg (2 kgs)
2 clove of garlic, pressed
2 tbsp Dijon mustard
2 tbsp Lamb Seasoning
2 tbsp olive oil
1 onion, quartered
2 carrots, sliced
2 sticks of celery, cut in pieces
4 potatoes
1 tbsp flour
1 tbsp butter
½ c. beef broth
½ c. red wine
Preparation:
Set the oven at 500º f. Brush over the leg with mustard and then add in garlic and seasoning. Lay the leg in a pre-oiled dripping pan. Cook in the oven for 10 minutes, and then reduce temperature at 375º F. Add vegetables and cook for 70 minutes. Transfer the lamb and the vegetables on a service plate. Let stand for 10 minutes. In the meantime, prepare the sauce by adding in the dripping pan butter, flour, broth and the red wine. Reduce by half and then pour in a sauce boat. |
